Abstract

This study aimed to characterize the physicochemical and microbiological properties of brewer’s spent grain, a by-product of beer production, to assess its potential use in animal feed. Samples collected from Cervejaria Petrópolis, located in Uberaba, Minas Gerais, Brazil, were dried, ground, and subjected to physicochemical and microbiological analyses. The results indicated crude protein content of 23.17%, ether extract of 10.30%, ash content of 3.78%, and carbohydrate content of 41.81%. Microbiological analyses detected no contamination in the samples. It was concluded that dried brewer’s spent grain has potential as an ingredient in ruminant feed, contributing to the reduction of environmental impacts and adding value to this by-product.

Master’s degree in Chemical Engineering from Universidade de Uberaba (UNIUBE) (2023). MBA in Production Engineering from UNIUBE (2024) and specialist in Environmental and Sanitary Engineering from Universidade Norte do Paraná (2021). Holds a degree in Chemical Engineering from UNIUBE (2019). Currently, she works as a Process Analyst at Galvani Fertilizantes and as a professor in the Chemical Engineering program at UNIUBE.

José Roberto Delalibera Finzer, Universidade de Uberaba - UNIUBE, Uberaba-MG, Brasil

Ph.D. (1989) and Master’s degree (1984) in Food Engineering from Universidade Estadual de Campinas (UNICAMP). Holds a degree in Chemical Engineering from Universidade Federal de Uberlândia (UFU) (1973). Currently, he is a professor at Universidade de Uberaba (UNIUBE), teaching in the Chemical Engineering program and in the Graduate Programs in Chemical Engineering and Animal Health and Production in the Tropics. He works in the areas of Chemical Engineering and Food Engineering.
